Red wine dressing
In the early 2000s a wing of the Tenuta Campasso was renovated to be used as a vinegar factory, to resume the ancient family tradition in the production of vinegar, as typical of this territory of all peasant families.
The creation starts from the use of the original “mother”, an essential ingredient for the natural acetic fermentation, preserved in our family cellar for many decades now.
Thanks to the use of fine wines and aging for over 10 years in French oak barrels, the result is a complex and elegant condiment.
“Asil” is perfect for giving impetus to salads and steamed vegetables, for marinating meats and for preparing accompanying sauces.
